Recipe for Mango Salsa










Toss together in a bowl:
1 ripe mango, meat loosely chopped
¼-1/2 finely diced red onion
1 clove garlic, finely chopped (optional)
Juice of 2 limes
½-1 jalapeño, seeded and finely chopped
Finely chopped cilantro leaves to taste
Salt & pepper to taste if necessary, can also add a pinch or two of ground cumin

Serve with grilled or pan-fried fish or grilled chicken & fresh corn tortillas.
You may substitute tomatoes or peaches or papaya for the mango.
